Strawberry Bread


I have always loved to cook. I wish I could make up recipes like so many of the Instagrammers I follow, but alas, that is not my gift. Instead, I find recipes, tweak them until they are virtually my own, and I cannot even remember what the original recipe was like. This is one of those recipes.


I originally got this recipe from a church cookbook - you know the ones I'm talking about. I wish I could remember who originally wrote this recipe, and if I ever find the original, I will post about it to give proper credit. In any case, here is my Strawberry Bread recipe. Enjoy


Ingredients:

3 C. All Purpose Flour

1 tsp Baking powder

1 T. Cinnamon (I like it very cinnamony - so I do a LOT of Cinnamon)

2 C. Sugar (you can use some sugar replacement here like Swerve, but I would suggest keeping some regular sugar in the recipe if you do)

10 oz. of Frozen or Fresh Strawberries (Lets face it, I've tried it both ways, fresh is better)

1 1/4 C. Vegetable Oil (may sub Coconut oil in its melted state)


Preheat Oven to 350 degrees F.


Combine all ingredients in a bowl. Mix well until moistened. Spoon batter into 2 well greased loaf pans, or use parchment paper to line your pans. Bake for 60-70 min, or until toothpick comes out clean when inserted in middle of loaf.


Serves 12 slices.


Approximate Macros for this are: 50.3C/25.7F/6.8P - as you can see, not entirely a macro friendly food, but as I've talked about in the past, all food can fit in a macro lifestyle.
